Description
Collection is available from our farm in Croxton Kerrial.
Goose has dark, dense meat with an intense flavour. Our geese are kept under brooders for around 7 – 10 days. Once off the heat and fully feathered, they strut around the fields surrounding the farmyard. Later in the season, we move them to different fields, and they can often be seen marching down the road in the mornings and evenings as they travel to and from their daily pastures.
Goose has a lovely layer of fat underneath the skin on the breast, which keeps it moist during cooking. The goose weight includes the giblets, which are great for gravy, and fat that can be rendered for crispy roast potatoes.
We recommend roasting your goose for 25-30 minutes per kilo at 200°C/400°F.
